We had a rainy day this week and happened to have a bag of russet potatoes on hand. B suddenly had a vision of soup come to mind and I just love when that happens! So here is the recipe he threw together with what we had and it was delicious! PLEASE NOTE: we did not take all the pictures we wanted of this one, WE WILL GET BETTER, but it was so good, we still wanted to share it!
B’s RAINY DAY POTATO SOUP RECIPE
INGREDIENTS:
- 2 1/2 to 3 Pounds of Potatoes (we used about 1/2 of a 5 pound bag or so:) Chopped
- 1 Yellow Onion Chopped
- 3 Stalks Celery Chopped
- 1 Green Pepper Chopped
- 2 Cloves Garlic Chopped
- 32 oz. Chicken Broth
- 1 to 1 1/2 Cups Milk (whole milk is preferred but it’s up to you!)
- 1 Tablespoon of Oregano
- 1 Tablespoon of Parsley
- Salt and Pepper to Taste
- One Tablespoon of Olive Oil
Chop potatoes and put in a pot. Just cover them with water (do not fill the pot) and boil the potatoes until tender (usually about 15 to 20 minutes).
Remove potatoes from heat, DO NOT DRAIN, and season with the oregano, parsley, and salt and pepper to taste (about 1/2 teaspoon of salt and pepper usually works).
In a separate pot, put in your olive oil, and then add your onions, green pepper, and celery. Saute for three to five minutes and then add garlic. Saute an additional two minutes. Once all is sauteed (and the kitchen is smelling glorious!), add the potatoes and the water they boiled in to the pot of onions, pepper, celery, and garlic. Lastly, add your chicken broth and cup of milk. Stir well and bring all to a boil. Cut down to low and let it simmer for an hour to hour and a half – the longer you simmer, the more it will thicken up, so it’s up to you! Stir occasionally. Serve when ready!
Garnish with your favorite toppings! Jalapenos, bacon bits, shredded cheese. And again, this picture does not do it justice! We didn’t get a picture of it served (we will next time) but trust me when I saw you will not regret cooking this recipe! Have fun!

Sounds delicious. But I know a man did this recipe because two pots were used. (insert laughter here). I’d cook those onions, etc. then add the potatoes with enough water to cover, about the same as you would have added if you cooked them separately, and add the milk and chicken broth, bring to a boil, ,turn down and let it all simmer for the hour and a half. The potatoes will cook and thicken as it simmers. You can also add a little instant potatoes to thicken potato soup. Save electricity, and save dishwashing time by using only one pot. I do love the recipe and might try it tomorrow. Thanks for sharing.
